HOW TO OPEN AND SERVE A BOTT LE OF WHITE WINE 怎么开和服务一瓶白葡萄酒 GUEST EXPECTATION: 客人的期望: To have the correct wine brought to the table and have the bottle of wine opened correctly so wine can be tast ed properly and the wine label is intact. 拿到桌上的酒是正确的,正确的开酒方法,酒的味道和 口感适当,商标完整。 Prepare a bottle of white wine. 准备一瓶白葡萄酒  Double check the wine label and bin number against the POS printed order.  对应 pos 机打印单,再次核对确认酒的商标和年份 Obtain the bottle of wine and put it in the wine bucket, fill ice cubes in the bu cket until to the rim and add cold water.  把酒放入冰桶,加冰加水,把口布放在冰桶上面。 Put napkin over the wine cooler from right to left, overhanging on the sides.  从左到右,将餐巾放到冰桶上。 Present the white wine. 展示酒  Present the bottle in horizontal position and it’s label uppermost with a servic e cloth supporting the base and back of the bottle to the guest and says, Mr. /Mrs./Ms./Sir/Madam XXXX.” this is the wine you have ordered, may I open t he now?” 在客人面前,给点酒 / 主人展示酒,用口布,一手拿住瓶底,一手拿住瓶颈, 稍微倾斜,商标对着客人,说:“ XXX 先生 / 女士,这是您点的 XXX 酒,现在 可以给您开吗?” Open the wine. 开酒  Place the white wine into the wine bucket.  把酒放回冰桶中。 Open the knife from the wine opener, ensure knife is sharp, clean and not rusty.  打开酒刀,保证酒刀干净,没有生锈,可以用的。 Cutting the foil. 切开铝皮  Hold the bottle’s neck with fingers firmly and hard.  用手指拿住瓶颈,  Cut the foil around approximately 0.5 cm down the mouth, turn the knife cloc kwise twice and anti-clockwise once.  在离瓶口 0.5cm 处用酒刀,切开铝皮(划一周),如果转不了一周,就切两 次。  Remove the cut foil, place it in your pocket  撕掉铝皮,放到口袋里  Close the knife carefully.  合上酒刀,用干的口部擦一下瓶颈和上面的木塞。  Use a dry clean service napkin, wipe the mouth of the bottle and the top of th e cork. 用一条干净的餐巾包在瓶口和瓶塞的顶部。 Removing the corkscrew. 拔掉瓶塞  Pierced the cork in the middle with the wine opener’s skewer, lift the cork upwards with the right hand and left hand holding to the bottle’s neck firmly.  用酒刀的螺旋状的对准木塞得中心,旋到底,右手慢慢拔,左手紧握住瓶颈。  Place the cork upwards on the guest table besides the wine glass.  把木塞方在酒杯旁边的桌子上 Or 或者  Use a cork holder (If applicable) and place this in front of the head of the tabl e or the person who will taste the wine.  或者放在专门盛放木塞的容器里,放置于主人面前,或试酒的客人面前  Wipe the bottle’s mouth inside out.  从里向外擦拭酒瓶口 Presenting the wine. 试酒  With the label facing the guest, pour the wine consisting of a mouth full quantit y for the guest to taste.
