HOW TO OPEN AND SERVE A B OTTLE OF RED WINE 如何开和服务一瓶红葡萄酒 GUEST EXPECTATION: 客人的期望: To have the correct wine brought to the table and have th e bottle of wine opened correctly so wine can be tasted pr operly and the wine label is intact. 拿到桌上的酒是正确的,正确的开酒方法,酒的味道和口 感适当,商标完整。 Prepare a bottle of red wine. 准备一瓶红葡萄酒  Check the wine label and bin number against the POS printed order.  对应 pos 机打印单,再次核对确认酒的商标和年份 Approach the guest’s table and present the bottle in horizontal position.  在客人面前,给点酒 / 主人展示酒 Present wine to the guest. 向客人展示酒  The label is positioned uppermost with a service cloth supporting the base of the bottle to the guest and say, “Mr./Mrs./Ms./Sir/Madam XXXX,” this is th e wine ordered, may I open it now?”  用口布,一手拿住瓶底,一手拿住瓶颈,稍微倾斜,商标对着客人,说: “XXX 先生 / 女士,这是您点的 XXX 酒,现在可以给您开吗?””  Place the red wine on the table.  将红酒放在桌子上 Open the wine. 开酒  Open the knife from the wine opener; knife must be sharp, clean and not rust y.  打开酒刀,保证酒刀干净,没有生锈,可以用的。  Hold the bottle’s neck with fingers firmly.  用手指牢牢握住瓶颈  Cutting the foil. 切开铝皮  Cut the foil around approximately 0.5 cm down the mouth, turn the knife clock wise twice and anti-clockwise once.  在离瓶口 0.5cm 处用酒刀,切开铝皮(划一周),如果转不了一周,就切两 次。  Remove the cut foil, place it in your pocket  合上酒刀,用干的口部擦一下瓶颈和上面的木塞。  Hold the bottle neck firmly and hard.  紧握住酒瓶  Remove the cut foil; place it in your pocket.  撕掉铝皮,放到口袋里  Close the knife carefully.  小心的合上开酒刀 Pull the cork 拔掉酒塞 Pierced the cork in the middle with the wine opener’s skewer, lift the cork upw ards with the right hand and left hand holding to the bottle’s neck firmly.  用酒刀的螺旋状的对准木塞得中心,旋到底,右手慢慢拔,左手紧握住瓶颈。 Wipe the bottle’s mouth inside out with the service cloth.  用口布轻轻擦拭瓶口 Place the cork upwards on the guest table besides the red wine glass.  把木塞方在酒杯旁边的桌子上 Serving the red wine 服务酒水  With the label facing the guest, pour the red wine consisting of a mouth f ull quantity for the guest to taste.  商标对着客人,给点酒 / 主人倒一口酒的量,让客人试酒。 After guest has tasted, serving of wine will be  Clockwise, while ladies first, the person who  tasted last.  得到确认后,按照顺时针方向,女士优先,顺序给客人倒酒,试酒者最后 倒酒 Pour 1/2 of red wine into the glass. 倒酒倒 1/2 杯 Summary questions 总结  Why should you check the bin number and the wine label?  1. 为什么需要检查酒标和年份 ?  Why should the label be visual for the guest when presenting?  2. 为什么在试酒时酒标要让可以看见 ?  Why should you support the bottle with a napkin?  3. 为什么要用口部持酒瓶 ?  Why should you ask the guest if they would like to have the wine open now?  4. 为什么需要询问客人他们是否需要现在开酒 ?  Why should the knife be sharp, clean and not rusty?  5. 为什么酒刀需要锋利,干净无生锈?”  Why hold the bottle firm?  6. 为什么要紧握酒瓶 ?  Why should you remove the foil?  7. 为什么去掉铝皮?”  Why do you place the foil in your pocket?  8. 为什么要把铝皮放进自己的口袋里?”  Why be careful when closing the knife?  9. 为什么合上酒刀时候要小心?”  Why should you wipe the month of the bottle and top of the cork?  10. 为什么要擦拭瓶口和酒刀 ?  Why pierce the cork in the middle?  11. 为什么要对准酒塞的正中心开启?”  Why should the cork be placed on the table in front of the guest?  12. 为什么要把酒塞放在客人面前的桌子上?”  Why should you wipe the bottle inside out?  13. 为什么要从里向外擦拭酒瓶口 ?  Why should the label be facing the guests when pouring the wine?  14. 为什么倒酒时候酒标要面对客人 ?  Why should you pour only a mouth full in the glass?  15. 为什么只向酒杯里到一口酒?” Why is this task important for you and our guests?
